I have a new favorite meal and three of the five ingredients are things I would’ve never eaten a decade ago.
It’s funny how your tastes change as you get older.
My new favorite meal is brisket quesadillas. Casey loves to use his Traeger, so he makes a brisket and then we find ways to get at least three or four meals out of it.
When it comes off the smoker we might have homemade fries and mac. Which is delicious.
But day two is my favorite: brisket quesadillas.
Sautéed onions and green peppers, little chunks of brisket, cheddar and pepper jack cheese cooked in a low carb tortilla.
I used to hate onions and green peppers and I wouldn’t even have tried brisket. Now I request this meal!
I had it for dinner yesterday and again tonight. And in the morning I’ll use the rest of the brisket to make beef stroganoff in the crockpot to eat for two days.
